Food Lion is launching an exclusive line of four oils from Greece, Italy, Spain, and California. I decided to take the Italian olive oil and make one of my favorite fresh and easy recipes - bruschetta. It's a simple dish that can be a great appetizer, party favorite, or a quick lunch (just what we did on Saturday). It's important to have quality olive oil when making bruschetta and the Taste of Inspirations Italian oil was the perfect fit.

1 pint grape tomatoes, quartered (or diced, depending on preference)
1/4 cup fresh basil, chopped
1/4 cup diced onion
1 tsp minced garlic
1-2 Tbsp olive oil
1 tsp red wine vinegar
1/2 tsp black pepper
1/2 tsp salt
1 baguette, sliced
1) Add tomatoes, basil, onion, and garlic to a medium bowl. Stir to combine.
2) Season tomato mixture with olive oil, vinegar, pepper, and salt. Stir and serve on top of toasted baguette.
